Valentine's Sugar Cookie Brittle + Video
βCookie brittleβ just has this lovely ring to it, imho. I mean. βCookieβ is already a great word, objectively. So. βCookie brittleβ only sounds that much more appealing and intriguing. And festive. And exciting. And you probably are very confused right now. My apologies. Sometimes I think things and just canβt articulate them very coherently. Bear with me.
Anyway.
Today is Wednesday. And on Sunday, itβll be Valentineβs Day. And presently, I have a Valentineβs Day dessert for you. Or snack, more like. Itβs this Valentineβs sugar cookie brittle and itβs so cute and endearing and all the romantic things, not to mention so quick and easy and delicious.

Sugar cookies. Classic Valentineβs Day dessert option.
Hearts. Very Valentine-themed. Obvs.
Pink and red. The (non-official) colors of the holiday.
Combine them all together β a sugar cookie (but in brittle form, because FUN), red and pink heart sprinkles and sugar crystals, a glossy pink glaze β and youβve got this Valentineβs Day sugar cookie brittle delectableness.
This sugar cookie brittle is so quick to make and has a short list of hassle-free ingredients that require minimal equipment and come together in minutes.
This brittle is buttery and sweet. And full of vanilla flavor and a hint of almond flavor for that classic sugar cookie vibe.
The sugar cookie dough is spread thinly onto a pan, after which itβs sent off to the oven to bake into golden-brown, crispy, crackly, tender, melt-in-your-mouth cookie brittle perfection.
Then, once cooled, the sweet and glossy and rich glaze (make it pink for extra Valentine points) is drizzled over that golden cookie slab. And hearts and crystals are scattered over top. And then the slab is broken into shards that are the size of your choosing. Make 'em hand sized, for generous bark pieces. Or make βem half finger sized, for crunchy bite-sized pieces.
Either way. This glazed Valentineβs cookie brittle is just way too munch-able.

Valentine's Sugar Cookie Brittle
Yield: medium bowl of brittle
1 cup (2 sticks) butter, melted
3/4 cup granulated sugar
2 teaspoons vanilla extract
1/2 teaspoon almond extract
2 cups packed flour
1/2 teaspoon salt
Glaze:
1 cup confectioners sugar
1 teaspoon vanilla extract
Pinch of salt
1-3 tablespoons milk
Drop of pink or red food coloring (optional)
-Valentine themed sprinkles (hearts, red and pink crystals)
1. Preheat oven to 350 F. Line a jelly roll pan (about 13β wide and 18β long, give or take a couple inches β the larger the pan, the thinner the brittle will be) with parchment paper.
2. In a large bowl, whisk together the melted butter and sugar. Add in the extracts and whisk till smooth.
3. Pour the flour and salt over the wet ingredients and stir everything together until just combined.
4. Press the dough firmly and evenly into the lined pan. Bake brittle for 18-25 minutes, until browned at edges and deeply golden in center. Allow to cool before glazing.
5. Glaze: whisk together glaze ingredients until a thick yet pourable mixture forms. Drizzle over cooled brittle, then sprinkle with Valentine sprinkles before glaze sets. Once glaze sets, break brittle into pieces of desired size.
