First let’s chat about how quick and easy these Valentine’s Day bars are to make.

One bowl. One spatula. A few basic ingredients. A quick mix. Dough is done. Into the pan. Off to the oven.

And while that dough is baking up, prepare the glaze. One bowl. One spoon. A few key ingredients. A quick whisk. And glaze is ready to be spread atop the baked and cooled bars. And sprinkled with hearts. Or pink and red crystals. Or any other Valentine appropriate garnish you can conjure up and/or procure.

And, allow me to say this. Even if you aren’t celebrating Valentine’s Day this year, don’t write these gooey sugar cookie bars off just yet.

Valentine's Glazed Sugar Cookie Bars

Yield: 16-20 bars

2/3 cup light brown sugar, packed
3 tablespoons granulated sugar
1/2 cup oil (canola, vegetable)
1 large egg
1 tablespoon vanilla extract
1 1/4 cups packed flour
1 tablespoon cornstarch
1/2 teaspoon baking soda
1/4 teaspoon salt

Glaze:
1 cup confectioners sugar
Pinch of salt
1 teaspoon vanilla extract
1+ tablespoon milk (or non-dairy milk)
Drop of pink or red food coloring
-Valentine’s themed sprinkles (hearts, pink/red crystals etc.)

1. Preheat oven to 350 F. Line an 8" square baking pan with parchment paper, leaving some excess hanging over the rim for easy removal later.

2. In a large bowl, vigorously whisk together the sugars, oil, egg, and vanilla extract until smooth.

3. Pour the flour, cornstarch, baking soda, and salt over the wet ingredients and stir everything together until just combined.

4. Flatten dough into prepared pan. Bake for 20-24 minutes, until the edges are set and golden but the center is still slightly under baked. Bars may seem a bit raw but are supposed to be that way!

5. Let bars cool before lifting them out of the pan by the excess parchment paper and glazing.

6. Whisk together all the glaze ingredients until a thick yet pourable consistency forms. Spread glaze over bars. Garnish with sprinkles. Slice into bars of desired size.
