Gahhh finally! I'm posting mini cookies on the blog! Dream come true, this is. 

I'm obsessed with miniature things. This is a fact. And miniature cookies are amongst some of my favorite miniature objects. 

I mean, these cookies are tiiiiiiiiny. Teeny tiny. Like the size of a bloated quarter or a jumbo button. That tiny. And they're just so cute icanteven. 

I need a minute. The cuteness is overwhelming.

Here's the thing with these mini funfetti cookies: they're so, so easy to make, but also, even easier to pop into your mouth repeatedly.

Could that potentially be a problem, seeing as this recipe makes about 100 mini cookies and it wouldn't be too difficult to devour three quarters of them before realizing what you've done? Maybe. But I say, the adorableness of these sprinkle cookies overrides any other problems that might crop up.

Now, obviously, the size of these cookies is what makes them truly delightful. But that's not the only reason I love these miniature miracles.

These mini funfetti cookies are also loaded with sprinkles, hence the "funfetti" title. And while I can't say that sprinkles are my favorite thing in the world, they definitely do assist in making these cookies that much more enchanting. And kid-friendly, certainly.

And another reason I love these cookies: they taste wonderful.

These funfetti cookies are full of rich vanilla flavor, and they've got the slightest crunch on their edges edges with the softest, chewiest centers.

Now, if you'd like, you could always just use this recipe to make regular-sized funfetti cookies as well.

The cookies obviously won't be nearly as adorable, but if you've got something against cookies the size of a ring, normal-sized would be the route for you to go. Your kitchen, your decision.

What's also awesome about mini cookies in general is that they take a shorter amount of time to bake than normal-sized cookies do. Six-seven minutes of baking, and your cookies are ready to be removed from the oven. 

Also, these mini funfetti cookies require only one bowl and five minutes to make. So there's that.

Soft Mini Funfetti Cookies

Yield: about 100 mini cookies

½ cup oil (canola, vegetable, or melted coconut)
¾ cup light brown sugar, packed
¼ cup granulated sugar
1 egg
2 teaspoons vanilla extract
1 ½ cups packed flour
2 teaspoons cornstarch
¾ teaspoon baking soda
Pinch of salt
scant ½ cup sprinkles

Preheat oven to 350 F. Line 2 baking sheets with parchment paper.

In a large bowl, mix together the oil and sugars until smooth. Whisk in the egg and vanilla extract until mixture is smooth again.

Pour flour, cornstarch, baking soda, and salt right on top of wet ingredients and stir everything together until just combined. Mix in sprinkles last.

Round tiny pieces of dough between palms, forming balls. Space cookies out onto prepared baking sheets.

Bake cookies for about 6-8 minutes, until the tops just begin to crack and turn golden.  Let cookies firm up on sheets for a few minutes.
